Summer Berry Spritz: gin, pomegranate and soda
↓ Jump to recipeQuick answer
The Summer Berry Spritz is 60 ml London Dry gin, 20 ml Summer Berry syrup (strawberry and hibiscus), 30 ml pomegranate juice and 15 ml lime juice, mixed and poured over ice in a tall glass and topped with 150 ml soda or tonic. Garnish with whatever fruit is fresh.
Why does this recipe work?
The syrup is built from strawberry and hibiscus, so it brings fruit and tartness together. Pomegranate adds depth and colour, lime sharpens, and gin keeps the drink dry and herbal.
Where does it fit on a bar menu?
A spritz format is easy to sell to guests who want something light and colourful. Garnish with whatever berries or citrus are in season to keep the drink looking fresh. Compare with our Swa Strawberry syrup for a straight strawberry profile.

Soda or tonic?
Soda gives a cleaner, fruitier spritz. Tonic adds light bitterness that works well with gin and pomegranate.
Do I need fresh pomegranate juice?
Fresh juice gives the best colour and flavour. Use a good-quality unsweetened juice if fresh is not available, and adjust lime to taste.
Can I make this without gin?
Yes. Leave out the gin and top with extra soda for a berry-pomegranate cooler.
