Hello Sunshine: a passionfruit and gin tonic cocktail
↓ Jump to recipeQuick answer
Hello Sunshine shakes 60 ml London dry gin, 20 ml Swa Passion Fruit syrup and 10 ml lime juice, pours over fresh ice and tops with 150 ml tonic. It swaps the usual pineapple of a Sunshine cocktail for passionfruit.
Why passionfruit?
Sunshine cocktails are often made with pineapple. Passionfruit gives a more exotic, tangy profile, and it suits the dryness of London dry gin. The Swa syrup is made from passionfruit from Coorg or Malnad blended with Assam and Darjeeling tea.
Serving notes
Serve over fresh ice and add tonic last. It is a simple, repeatable serve for terrace and brunch menus. See our bar programmes and more Swa recipes.
