Swa Tamarind Shikanji Mocktail Recipe
Add a cup of water, some lightly pound ginger, peppercorn and jaggery to a small pot. Bring this to a boil over medium heat.
As it boils, reduce the heat to a simmer and continue to brew for at least 20 minutes to extract maximum flavour. Turn off the heat and allow it to cool to room temperature.
Add oil to a small saucepan and heat for a few seconds over high flame. Add mustard seeds and wait for it to sizzle. Once it sizzles, add curry leaves and turn off the heat. The heat in the pan will make the curry leaves crispy. Stir with a spoon
Build your drink in a tall glass. Add ice, Tamarind Shikanji syrup and 1/2 cup of the prepared spiced brew. Stir to combine.
Garnish with the prepared tempering and serve cold.
